Lots of posts today, but had to get in a recipe for ya'. Today it is baked veggies made with onion soup mix. Usually Lipton has the recipe on the back of the box, but in case it doesn't anymore, here goes....

OK, you know those Lipton onion soup mixes in the grocery store? Go get one or two packs (and they can be any type you want - regular onion or onion-mushroom, etc.)

Chop up some potatoes into small/med. chunks. Chop up some carrots the same way. Add a little olive oil to coat. Add a little bit of water to make it all wet, but don't put too much that the veggies are sitting in a pool of water. Add onion soup mix (one or two packs depending on how many veggies you use), salt and pepper and bake with lid on at 350 for, I think, 35 minutes. Oh shoot, I forgot the exact time. Just check it and it's done when the veggies are cooked through and are soft.

Makes a great side dish with any meat.
